Hey there! Here's how I make my sourdough bread. I've been baking bread for five years and have been into sourdough for the past year and a half. While my process is always evolving and the recipe varies based on what ingredients I have on hand, this is one simple method I've really enjoyed, and most importantly, it gets great feedback every time I share it. Here's the ingredient list and breakdown:
John's Sourdough Recipe
Ingredients
227 grams starter
301 grams flour
43 grams coconut flour
75-100 grams mixed seeds (flax, sunflower, pumpkin, chia)
199 grams water 1 teaspoon & a pinch of salt
Steps
Step 1: Combine for a soft tacky dough (Everything but the salt)
Step 2: Rest for 20 minutes
Step 3: Add salt and knead, let it rest and rise
Step 4: Stretch and fold, rest and rise, repeat as needed (in this video, I just let it rest in the bowl, then shaped it)
